Bring a large pan of salted water to the boil. Add the frozen edamame & boil for 3 minutes. Drain and run the beans under cold water for a couple of minutes.
Place the edamame, avocados, olive oil, lime juice & mint in a food processor. Blend until very smooth, scraping down the sides a couple of times & adding a little water if necessary. This will take a few minutes. The longer you blend the dip the creamier & fluffier it will be.
Add hot sauce (or chilli flakes), salt and pepper to taste and blend again.
Optional Ideas:
Use frozen green peas in place of the edamame beans.
Try coriander leaves instead of mint.
Add a few drops of toasted sesame oil.
