Edamame Avocado & Mint Dip

Course Side Dish, Snack


  • 300 grams frozen edamame beans
  • 2 large avocados
  • 4 tbsp olive oil
  • 2 limes , juiced
  • 1/2 cup mint leaves
  • hot sauce or chilli flakes
  • salt & pepper


  • Bring a large pan of salted water to the boil. Add the frozen edamame & boil for 3 minutes. Drain and run the beans under cold water for a couple of minutes.
  • Place the edamame, avocados, olive oil, lime juice & mint in a food processor. Blend until very smooth, scraping down the sides a couple of times & adding a little water if necessary. This will take a few minutes. The longer you blend the dip the creamier & fluffier it will be.
  • Add hot sauce (or chilli flakes), salt and pepper to taste and blend again.

Optional Ideas:

  • Use frozen green peas in place of the edamame beans.
  • Try coriander leaves instead of mint.
  • Add a few drops of toasted sesame oil.
