Add the coriander seeds, cumin seeds and sesame seeds to a small frypan and stir over a low heat until fragrant and lightly toasted. This will take about 3-5 minutes.
Put the spice mix, along with the dried herbs, salt and pepper, into a mortar and grind with a pestle until the seeds are roughly crushed.
Spread the mixture on a large plate and press each side of the salmon into it until they are evenly coated.
Heat the olive oil in a large frypan over a medium-high heat. When the oil is hot add the salmon, skin side down, reduce the heat to medium and cook for 4 minutes, pressing the fish down with a spatula occasionally. Turn the salmon and cook for another 2 minutes.
Serve the salmon with potato or cauliflower mash and steamed green beans, asparagus or broccolini for a super quick and easy dinner.
