Green Bean Salad with the Best Ever Miso Dressing

Ingredients
  

  • 600 grams green beans , trimmed
  • 2 green onions , finely sliced
  • 2 tbsp sesame seeds , lightly toasted

Dressing:

  • 2 tsp finely grated fresh ginger
  • 2 tbsp white miso paste
  • 2 tsp toasted sesame oil
  • 2 tsp rice syrup or maple syrup
  • 1 & 1/2 tbsp brown rice viegar
  • 2 tsp mirin

Instructions
 

  • Steam the beans for 6 minutes and then drain.
  • Make the dressing by shaking all of the ingredients in a glass jar.
  • Toss the shallots and beans with the dressing and sprinkle over the sesame seeds.

Tips:

  • You could replace the beans with asparagus, broccoli, snow peas, cucumbers, carrots or pumpkin.
