Healthy ANZAC Biscuits
As it's ANZAC Day today, why not whip up a batch of delicious, crunchy and traditional biscuits with a healthy twist?

- 3/4 Cup Wholemeal Spelt Flour
- 1/2 Cup Coconut Flour
- 1 Cup Coconut Desiccated
- 1 Cup Rolled Oats
- 1 Cup Coconut Sugar
- 1 Pinch Sea Salt Himalayan
- 225 ML Coconut Oil
- 2 Tbsp Maple Syurp or Raw Honey
- 2 Tbsp Water Boiling
- 1/2 Tsp Bicarb Soda
Preheat oven to 170 degrees and grease or line two baking trays.
Put the two flours, desiccated coconut, coconut sugar, rolled oats and salt into a large bowl and mix.
Melt the coconut oil in a small saucepan over gentle heat, then stir in the maple syrup.
Mix the boiling water and bicarb soda together, mix them into the saucepan.
Pour the wet ingredients into the dry ingredients and stir together.
Roll into balls and the n gently flatten onto trays using a rolling pin, spaced about 3cm apart.
Bake for 12-15 minutes or until golden.
Cool on wire racks.
