Healthy ANZAC Biscuits

As it's ANZAC Day today, why not whip up a batch of delicious, crunchy and traditional biscuits with a healthy twist?

Ingredients
  

  • 3/4 Cup Wholemeal Spelt Flour
  • 1/2 Cup Coconut Flour
  • 1 Cup Coconut Desiccated
  • 1 Cup Rolled Oats
  • 1 Cup Coconut Sugar
  • 1 Pinch Sea Salt Himalayan
  • 225 ML Coconut Oil
  • 2 Tbsp Maple Syurp or Raw Honey
  • 2 Tbsp Water Boiling
  • 1/2 Tsp Bicarb Soda

Instructions
 

  • Preheat oven to 170 degrees and grease or line two baking trays.
  • Put the two flours, desiccated coconut, coconut sugar, rolled oats and salt into a large bowl and mix.
  • Melt the coconut oil in a small saucepan over gentle heat, then stir in the maple syrup.
  • Mix the boiling water and bicarb soda together, mix them into the saucepan.
  • Pour the wet ingredients into the dry ingredients and stir together.
  • Roll into balls and the n gently flatten onto trays using a rolling pin, spaced about 3cm apart.
  • Bake for 12-15 minutes or until golden.
  • Cool on wire racks.
