Ingredients

walnuts
, activated or lightly toasted

Lebanese cucumbers
, sliced

cherry tomatoes
, halved

red onion or shallots

feta
, crumbled

parsley
, finely chopped

mint
, finely chopped

Dressing:

olive oil

lemon zest

lemon juice

ground allspice

salt

pepper
Instructions
Toast the walnuts if necessary and then roughly chop them when they have cooled.
Layer all of the salad ingredients in a bowl.
Place the dressing ingredients into a small jar and shake to combine. Taste for salt and pepper.
Toss the salad with the dressing just before serving.
