Spiced Tahini Cookies

Ingredients
  

  • 1 & 1/2 cups blanched almond meal
  • 1/2 tsp baking powder
  • 1 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup hulled tahini
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla
  • 1/3 cup sesame seeds

Instructions
 

  • Preheat the oven to 175C and line a baking tray with baking paper.
  • Mix the almond meal, baking powder, cardamom, cinnamon and salt in one bowl.
  • In another bowl whisk the tahini, honey and vanilla altogether.
  • Stir the two mixtures together until well combined.
  • Shape the cookie mix into 2cm balls, flatten into discs and place them on the baking tray about 3cm apart. Sprinkle the cookies with sesame seeds.
  • Bake for 8-10 minutes, until golden. Cool before eating.

Optional Ideas

  • Top the cookies with chopped pistachios or walnuts instead of sesame seeds.
  • Add the finely grated zest of an orange.
  • To make chocolate tahini cookies add 1 cup of choc chips to the cookie mixture.
  • Make the recipe vegan by replacing the honey with maple syrup or brown rice syrup.
