You could make the cookies vegan by using maple syrup or ice syrup instead of honey.
Spiced Tahini Cookies
Ingredients
- 1 & 1/2 cups blanched almond meal
- 1/2 tsp baking powder
- 1 tsp ground cardamom
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/3 cup hulled tahini
- 1/3 cup honey or maple syrup
- 1 tsp vanilla
- 1/3 cup sesame seeds
Instructions
- Preheat the oven to 175C and line a baking tray with baking paper.
- Mix the almond meal, baking powder, cardamom, cinnamon and salt in one bowl.
- In another bowl whisk the tahini, honey and vanilla altogether.
- Stir the two mixtures together until well combined.
- Shape the cookie mix into 2cm balls, flatten into discs and place them on the baking tray about 3cm apart. Sprinkle the cookies with sesame seeds.
- Bake for 8-10 minutes, until golden. Cool before eating.
Optional Ideas
- Top the cookies with chopped pistachios or walnuts instead of sesame seeds.
- Add the finely grated zest of an orange.
- To make chocolate tahini cookies add 1 cup of choc chips to the cookie mixture.
- Make the recipe vegan by replacing the honey with maple syrup or brown rice syrup.
