Edamame & avocado are a delicious combination in this fresh & easy dip that takes only minutes to prepare. Serve with corn chips, crackers or sliced veggies, & spread the leftovers on a sandwich or add to a salad bowl the next day. It is also a great for school lunchboxes!
Edamame Avocado & Mint Dip
Ingredients
- 300 grams frozen edamame beans
- 2 large avocados
- 4 tbsp olive oil
- 2 limes , juiced
- 1/2 cup mint leaves
- hot sauce or chilli flakes
- salt & pepper
Instructions
- Bring a large pan of salted water to the boil. Add the frozen edamame & boil for 3 minutes. Drain and run the beans under cold water for a couple of minutes.
- Place the edamame, avocados, olive oil, lime juice & mint in a food processor. Blend until very smooth, scraping down the sides a couple of times & adding a little water if necessary. This will take a few minutes. The longer you blend the dip the creamier & fluffier it will be.
- Add hot sauce (or chilli flakes), salt and pepper to taste and blend again.
Optional Ideas:
- Use frozen green peas in place of the edamame beans.
- Try coriander leaves instead of mint.
- Add a few drops of toasted sesame oil.
