Apple & Blackberry Crumble
Ingredients
- 500 grams apples , peeled and cut into 1cm slices
- 500 grams blackberries , fresh or frozen
- 1 tbsp coconut sugar
- 1 tsp ground cinnamon
- 80 grams butter (1/3 cup)
- 1/3 cup blanched almond meal
- 1/2 cup coconut sugar
- 1 tsp vanilla
- 2 tsp ground cinnamon
- 3/4 cup whole almonds
Instructions
- If using frozen blackberries first defrost them in a colander to drain extra liquid. This will take a couple of hours or you can put them in the fridge the night before to defrost.
- Preheat oven to 200C.
- Combine the apples, blackberries, 1 tsp cinnamon and 1 tbsp sugar. Place in the bottom of a baking dish.
- Dice the butter and then place it in a food processor along with the almond meal, 1/2 cup coconut sugar, 2 tsp cinnamon and vanilla. Pulse until the mixture looks like breadcrumbs. Add the whole almonds and process a little, so almonds are still quite chunky. Press the crumble mixture over the apples and blackberries quite firmly.
- Bake the crumble for 30 minutes or until well browned. Serve warm with cream, ice cream, custard or creme fraiche.
Recipe options:
- You can use so many different fruits in this recipe. Plums, rhubarb, pears, strawberries, raspberries and blueberries would all be lovely.
- Vary the spices or nuts in the crumble. Try cardamom, allspice, nutmeg, ginger, hazelnuts, pistachios, pecans or macadamias.
