Miellerie Honey is proudly produced in Tasmania by a Frenchman named Yves Ginat. Yves and his passionate team apply a unique approach to bee keeping, nurturing the bee community using organic and biodynamic beekeeping practices to maintain health and harmony from the hive to the jar. The honey is extracted at room temperature and packaged at bee hive temperature so that the honey maintains its finest natural aroma and health qualities.
When we asked the creator himself what his favourite Miellerie Honey flavor is he simply couldn’t choose, it depends on what his palate feels like at the time. They’re all unique! Possibly the Leatherwood, for its floral freshness might be a stand out at the moment. In terms of what can be expected in the future, Yves and his team are currently researching new varieties of honey, unique to Tassie & Australia. A space to be watched!
Miellerie is currently producing 5 varieties of honey:
Leatherwood: A distinctive flavor full of soft aromas like the sweet dew of the cold rainforest floor.
Lake Pedder: A magical diversity of flora blossoms; Banksia, Tea Tree, Button grass, Melaleuca and Peppermint. This honey is rich of aroma with a little bitterness.
Prickly Box: A subtle honey with warm butter-scotch flavours.
Blue Gum: An earthy honey soft and delicate in perfume.
Tea Tree: Amber Colour with a distinct and pronounced taste. This honey has a remarkable thick texture with soft, fine crystals, rich in natural antibiotics.
